Dried tomatoes have become increasingly popular in recent times. Tomatoes were first dried in Italy as a means of preserving them for the winter. Drying removes only the water from the fruit, whilst all the nutrients remain, such as fibre, antioxidants, vitamins A and C, sodium, potassium and iron. They are high in fibre and contain almost no fat. It has been shown that a diet rich in tomatoes helps to prevent various serious diseases.
