Xylitol is a natural sweetener extracted from birch bark. It has a low glycaemic index and a lower energy content than ordinary sugar. It is ideal for diabetics and anyone who wants to sweeten their life in a healthy way! In the human body, xylitol is a normal component of metabolic processes.
It is also commonly found in small quantities in nature. Some of the best sources include fruit (raspberries, plums, strawberries), wild berries, mushrooms, lettuce, sweetcorn cobs and oats. One cup of raspberries contains approximately 1 g of xylitol.
Xylitol is suitable for diabetics and has about 40 per cent fewer calories than refined white sugar. It has a very low glycaemic index and is metabolised by the body without insulin. It is reported that up to 50 g of xylitol per day can be consumed as part of a diabetic diet. Replacing sugar with xylitol reduces the risk of developing type 2 diabetes (adult-onset diabetes).
Xylitol does not provide a breeding ground for the growth of Candida fungi. Despite its sweet taste, it is not a food source for fungi that feed on sugar. Fungi cannot reproduce when deprived of food, and xylitol is therefore a safe sweetener for people suffering from candidiasis. By limiting the growth of fungi, it helps to restore a balanced gut microflora. 
Xylitol is also an excellent agent for combating tooth decay. Numerous studies have shown that xylitol remineralises tooth enamel and even the bones themselves. Tooth decay results from a reaction between bacteria and sugars from food. This reaction produces acids that demineralise tooth enamel – leading to tooth decay. When sugar is replaced with xylitol, this mechanism is halted and is even replaced by a remineralisation process, allowing the tooth tissue to ‘heal’.
